Good morning!

“It’s dark and it’s cold,” Caro said this morning. “What the heck.” It’s true. It is much darker in the morning than it has been, and I am now wearing a jacket on my bike. Crazy! Wasn’t it summer like two weeks ago?

No matter, we’re still here doing what we do best: baking breads, pastries, and baked goods in the early morning hours, whether it’s chilly or not. Here are some nice updates for the week.

Starter Thursdays

Every Thursday from now on, we will have 6 little containers of free starter to give out to folks who want to get back to their bread baking. It’s a very small amount but it comes with instructions to get it started.

Chausson aux Pommes

Today we are adding another beloved pastry to our laminated pastry menu: the chausson aux pommes, otherwise known as the French apple turnover. Made with lightly spiced apples from Three Springs Fruit Farm, and our einkorn puff pastry. Flaky and perfect for fall. Because as I mentioned, it’s fall now!

Thursday Loaf

This week’s Thursday loaf is another celebration of the local: honey oat porridge sandwich loaves, made with honey from the Honeybee Shoppe in Manheim, PA, and filled with porridge made from Scottish oats grown on Wild Hive Farm in Clinton Corners, NY. A lovely custardy crust perfect for butter, salt, and honey toast. Another fall favorite.

“Sausage” Rolls

This Saturday and Sunday, we will start offering our version of sausage rolls, the British puff pastry snack that I grew up eating. I wanted to make the most accurate sausage roll that was also vegetarian, so ours has local mushrooms, green lentils, walnuts, thyme, sage, and rosemary, with a little miso and soy sauce for extra meaty flavor. They are — to me — perfect. Catch them first thing Saturday and Sunday mornings.

The End of Canelé

We pulled challah, then we brought challah back. But we’re for real this time about canelé. Bye-bye for now, sweet canelé.
