Tomato pie for the Super Bowl and cassatelle di Sant'Agata for Valentine's Day

Against the odds, we’ve officially made it to February. Congrats to you and me — by my logic, that means spring is right around the corner.
I’m always amazed at how time flies in bakery world: when you’re prone to looking toward the next event, the next special occasion, the next seasonal change, the next new fruit coming in, it really does speed up the calendar. I don’t love it because fast things and aging stress me out. But I do like knowing winter doesn’t last forever. That’s pretty ace.
While our beloved Eagles didn’t make it to the Super Bowl this year, our even more beloved (sorry) Bad Bunny did, so we will be offering a small preorder on whole tomato pies this Sunday to bring with you to the Bad Bunny Bowl. As a reminder, our tomato pies are vegan and serve between 8 and 12 people, depending on your crowd. Pickup is between 11am and 3pm on Sunday.
Then on Valentine’s Day, even though our whole heart will be spent focused on running our nighttime diner event, we couldn’t resist debuting a little special treat in a limited quantity. We’ll be making individual cassattelle di Sant’Agata, a Sicilian sponge cake that is filled with ricotta cream, candied orange peel, chocolate chips, and enrobed in marzipan and icing. There’s a whole story about what makes this cake so special but you’ll have to check our Instagram to hear all about it.
We’re making 2-packs of cassatelle. Pickups are at the bakery on Saturday, February 14th from 9am to 3pm. We’ll also have some smaller cassatelle on the counter on Saturday and Sunday this weekend, as well as next weekend, so if you miss the preorder, catch them then. Just don’t sleep in — these gals will get snatched up.

Dayna’s What’s Up Corner
Wow, okay, wow. It was such a treat to get to bake for the opening of the Shaker exhibit at the ICA (Sam turned to me with a coy smile and said, “We’re really movers and shakers, aren’t we?” He’s still got it.). The exhibit is incredible — such a grounding example of how function and beauty can co-exist. I have been listening to Benito tirelessly while we wait for his performance on Sunday, somehow he doesn’t get old. I also have been listening to Jadsa’s album Big Buraco. I’m reading Remains of the Day by Kazuo Ishiguro. And I saw The Testament of Ann Lee with Rachel on Monday. I thought it was good, if a little too musical-ly for me, but what I loved the most was all the ~moveeeeement~. It’s a sight to behold, all those bodies.

I would like to know if your pizza dough is organic and if not does it contain any additives like ADA, or any other dough conditioner's? Thank you and I look forward to your speedy reply
