Join us this Saturday for a Taiwanese pop-up with 30 Percent Patisserie
Hello!
Last you heard from me I was writing to you while facing a beautiful pond outside of Skowhegan, Maine. Now, I am writing to you while attempting to tune out the noise of an airport departures lounge, while facing a two-hour flight delay.
And such is the nature of life! Sometimes you’re way up … and sometimes you’re at the airport.
It’s all good, though, because that means I get extra time to follow through on my true calling: Telling you to come to the bakery this week — Thursday through Sunday, 9am to 3pm. Hey, come to the bakery this week. You will not regret it.
It won’t just be any old week, either. Yes, we’ll have ice cream. Yes, we’ll have a special Pastry Passport item on Saturday. Yes, we’ll have sourdough cinnamon rolls. Yes, we’ll have sourdough shokupan for tomato and mayo sandwiches. But what is most exciting is that we’ll have pastry chef Hsin-Hui Chen of 30 Percent Patisserie in the house selling pastries inspired by her Taiwanese heritage on Saturday from 9am until she sells out.

Like most pop-ups we do at the bakery, we’re doing a good amount of it as a preorder, so anything that strikes your fancy on her menu — black sesame pastries, Taiwanese sun cake, egg tarts — don’t risk missing out. Preorder now!
Preorder Here!Hsin-Hui will be at the bakery from 9am until sellout, so anything you didn’t grab by preorder, we’ll have on the counter as a first-come-first-serve type deal. And we’ll be making a special treat of hers for our Pastry Passport this weekend. More on that this Friday, as usual! 🇹🇼
Thursday loaf this week isn’t quite a loaf but it is quite a special treat. We’ll be making sourdough milk buns topped with whipped ricotta filling, spicy tomato jam, sungold tomatoes, and fresh basil. Come through from 9am to grab one. And if you like ‘em, we’ll do them again.
We’ll have roasted peach ice cream for the next week or two, and then with any luck we’ll be moving onto BLACKBERRY! This — besides blackcurrant — is the most elite ice cream flavor and never let anyone tell you otherwise. <3
That’s all for now. Looking forward to seeing everyone at Downtime Bakery, the best bakery in the world besides all the other ones that I love.
xo,
Dayna

As you know, I was in MAINE for a conference to teach about whole grains. I really enjoyed myself. Teaching is such a privilege. I went book shopping while I was in Portland and got to experience some wonderful independent bookshops there — Littlejohn Press, Total Loss Books, and Bold Magazine Shop, all hits! We also saw The Odyssey in Portland — I drank a cherry Icee and wore ear plugs the whole time. It was a blockbuster, as expected. More entertaining to me, though, was translator Emily Wilson’s absolutely epic ;) takedown of the movie. I could read that delicious piece of criticism 1,000 times.
